Place the veggies on bread
Heat 1 tablespoon of olive oil in a frying pan over medium heat.Add the sliced red onion and sauté until translucent and slightly caramelised, about 3-4 minutes.Remove the onion from the pan and set aside.In the same pan, add another tablespoon of olive oil if needed, and sauté the sliced bell peppers and zucchini until they are tender-crisp, about 3-4 minutes. Season with salt and pepper to taste. Set aside.Take two slices of bread for each sandwich and butter one side of each slice.Place one slice of bread, buttered side down, on a clean surface.Layer with the Britannia The Laughing Cow Cheese Slices, followed by the sautéed vegetables (onion, tomato, bell peppers, zucchini).
Step 2
Serve and enjoy!
Top with another slice of bread, buttered side up.Heat a clean frying pan or griddle over medium heat.Carefully place the assembled sandwiches onto the pan and cook until the bottom bread slice is golden brown and crispy, about 2-3 minutes.Carefully flip the sandwiches using a spatula and cook the other side until golden brown and the cheese is melted, about 2-3 minutes more.Remove the sandwiches from the pan and let them cool slightly before slicing and enjoy hot.
