Step 1
Place the veggies on tortilla
Heat a large skillet or griddle over medium heat. Spray lightly with non-stick cooking spray.Place one tortilla in the skillet. Sprinkle half of the cheese, jalapenos, onion, and chilli powder over one-half of the tortilla.Fold the tortilla in half, pressing down gently to seal the edges.
Step 2
Serve and enjoy!
Cook for 2-3 minutes per side, or until the cheese is melted and the tortilla is golden brown and crispy.Repeat with the remaining tortilla and cheese mixture.Cut the quesadillas into wedges and serve with your favourite salsa, guacamole, or sour cream.
