Prepare the pancake mixture
In a mixing bowl, combine the flour, baking powder and salt. In a separate bowl, whisk together the egg and milk. Gradually add the wet ingredients to the dry ingredients, mixing until smooth. Fold in the shredded cheese.Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface and the edges are set.
Step 2
Cook for 2 minutes, serve and enjoy!
Flip and cook for another 2 minutes until golden brown. Stack the pancakes on a plate and serve hot with a side of sour cream, salsa, or just a sprinkle of extra cheese.
