This is a quicker, easier take on the classic kalakand, made by substituting traditional paneer or khoya with ricotta cheese.

Step 1

Prepare the mixture

In a non-stick pan, heat 1 tbsp ghee over medium heat. Add ricotta cheese and cook for 8-10 minutes until it thickens slightly. Stir in the condensed milk and optional sugar. Cook until the mixture thickens, about 10-12 minutes.

Serve and enjoy!

Mix in cardamom powder and saffron. Cook until the mixture reaches a fudge-like consistency. Pour into a greased dish, spread evenly, and garnish with pistachios and almonds. Let it cool, then slice it into squares. Enjoy!
