Step 1
Prepare the filling
In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Sift the plain flour and baking powder into the bowl and fold gently until fully incorporated. Pour the batter into a greased baking pan, spreading it evenly. Set aside while you prepare the plums. In a separate bowl, combine the chopped plums, soaked nuts, and brown sugar. Evenly distribute this mixture over the batter in the pan.
Step 2
Bake the cake and spread the plum jam
Preheat the oven to 180°C. Bake the cake for 40 minutes or until a skewer inserted in the centre comes out clean. Remove from the oven and let it cool completely. In a mixing bowl, whip the heavy cream until soft peaks form. Add the vanilla sugar and continue whipping until the mixture thickens. Gently fold in the Britannia The Laughing Cow Cream Cheese until well combined. Once the cake has cooled, carefully slice it in half horizontally. Spread the plum jam evenly over the bottom layer, then spread a generous layer of the cream cheese filling on top. Place the top layer of the cake over the filling.

Top with icing sugar and enjoy!
Refrigerate the assembled cake for 3-4 hours. Just before serving, dust the top with icing sugar for a decorative touch. Slice and enjoy!
