Prepare the dough
In a small bowl, sprinkle yeast over warm water. Let stand for 5 minutes until foamy. In a large bowl, whisk together flour, sugar, oregano, and salt.Beat egg and olive oil together, then stir into dry ingredients.Stir in the yeast mixture until the dough forms a ball. Turn dough onto a lightly floured surface and knead for 8 minutes until smooth and elastic.Place dough in a lightly oiled bowl, cover it and let it rise in a warm place until doubled in size, for about 1 hour.
Step 2
Cook the veggies
In a saucepan, combine diced tomatoes, tomato paste, onion (if using), oregano, garlic, onion powder, salt, and pepper.Cook over medium heat, stirring occasionally, until thickened, about 15-20 minutes. Preheat oven to 450°F (235°C). Grease a baking sheet. Punch down dough and divide into two equal pieces. Shape dough into two rounds, let rest for 10 minutes, then roll into rectangles. Place dough on the prepared baking sheet. Spread pizza sauce evenly over the dough.

Serve and enjoy!
Sprinkle with 1 ¼ cups mozzarella cheese, then add desired toppings (bell pepper, onion, mushrooms). Top with remaining ¼ cup mozzarella cheese. Bake in preheated oven for 20-25 minutes, or until crust is golden brown and cheese is melted and bubbly. Enjoy.
