Step 1
Prepare the onion mixture
To prepare this delicious tomato soup at home, heat a pot on medium heat and add butter and later chopped onions into the mixture. Saute the onions for 10-12 minutes, stirring occasionally until golden and soft. Now, add minced garlic and saute for a minute until aromatic and fragrant. Now, stir crushed tomatoes with their juice, chopped basil, chicken stock and black pepper. Stir together and bring it to a rolling boil.
Step 2
Blitz the soup in batches
Reduce the heat, cover the lid partially and simmer for 10 minutes. With a chunky consistency and blended creamy soup, blend the soup in the pot to the desired consistency to blend in batches. Blitz until smooth and then return the blended soup to the pot over medium heat. Add ½ cup heavy cream and 1/3 cup freshly grated parmesan cheese and then later return to simmer. Season to taste with salt and pepper and turn off the heat if needed.
Step 3
Garnish with basil leaves, enjoy!
Ladle into warm bowls and top with parmesan cheese and chopped fresh basil leaves for a flavourful taste. Serve and enjoy!
