Step 1
Prepare the mixture
Start by preheating the oven to 350F and greasing the pan. Prepare the banana bread and in a large bowl and add the sugar, coconut oil, vanilla and egg. Whisk to combine to mixture and add the bananas to stir to incorporate. Add baking powder, salt, baking soda and 1 cup flour into the large bowl. Stir gently with the help of a spoon and spatula, and set aside. Ensure that you’re not overmixing it. Stir about 2-3 of the batter in the prepared pan, smoothing the top lightly with a spatula.

Now, prepare the cream cheese filling by adding all the ingredients in a large mixing bowl with a hand mixer. Evenly pour the filling mixture over the bread and smooth the top lightly with a spatula and push it into the corners, so the mixture is spread completely. Top the mixture with the remaining batter and ensure that the cream cheese layer is not disturbed. Bake the batter for about 48-50 minutes or until the top is golden and centre is set. Allow the bread to cool in a pan for about 15 minutes and slice it accordingly.
