Step 1
Prepare the bhaji
Heat water in a pan and add the mashed potatoes, chopped carrots, beans, and tomatoes. Cook the vegetables until soft. Once done, mash them well and set aside. In a non-stick pan, heat the oil and butter. Add the finely chopped onions, green chilli, and capsicum. Sauté until the onions are soft and golden. To the sauteed vegetables, add the Kashmiri chilli powder, cumin powder, turmeric powder, coriander powder, garam masala, and amchur powder. Stir well and cook for 2 minutes until the oil begins to separate from the spices.
Step 2
Toast the buns
Add the mashed vegetables into the pan and mix everything together. Pour in a little water to adjust the consistency. Simmer the mixture for 5-7 minutes, allowing all the flavours to blend. Heat a tawa and melt a little butter on it. Slice the pav buns and toast them on the tawa until golden and crispy. Place the toasted pav buns on a serving plate. Spoon the hot bhaji on top of each pav.
Step 3
Add a dollop of butter, serve hot
Add a dollop of salted butter, squeeze over the Britannia The Laughing Cow Creamy Cheese Sachets, and sprinkle a few coriander leaves.Serve the Cheese Pav Bhaji hot, with a side of sliced onions and lemon wedges for extra flavour.
