Prepare the dough
Combine the yeast, sugar, and warm water in a large bowl. Let sit for 5 minutes, or until the yeast becomes foamy. Stir in the olive oil, salt, and vinegar. Gradually add the flour, one cup at a time, until a soft dough forms.Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. Cover and let it rise for an hour.In a small bowl, combine the melted butter, garlic (if using), and Italian seasoning.

Preheat the oven to 200°C. Roll out the dough about 1/4-inch thick. Brush evenly with the garlic butter mixture. Sprinkle with half of the cheese.Roll the dough up tightly. Pinch the seam to seal. Cut the dough roll into 1-inch-thick slices. Twist each slice slightly and place them on the prepared baking sheet, leaving space in between for them to rise. Brush the tops with the remaining garlic butter and sprinkle with the remaining cheese.Bake for 15-20 minutes, or until golden brown and the cheese is melted and bubbly. Let cool slightly before serving.
