Step 1
Prepare the cheese mixture
Start by straining the water from the ricotta cheese with cheesecloth. In a mixing bowl, add the strained ricotta cheese, milk powder, sugar and cardamom powder. Mix thoroughly and ensure that the cheese mixture is semi-solid after the sugar is mixed. Pour the cheese mixture into the ghee-coated vessel and add the saffron strands on top of it. Cover the container with aluminium foil and steam for about 30 minutes on the stovetop.

Serve and enjoy!
In a pot, add water and place the ricotta cheese mixture on top of the trivet. After steaming, allow the Sandesh to cool down and later refrigerate for 2-3 hours. After 2 hours, remove the foil and run a knife around the edges. Carefully transfer the Sandesh to a plate and slice it into the desired shape. Serve chilled and enjoy!
