Step 1
In a bowl, mix mashed potatoes, grated carrots, capsicum, herbs, pepper, and salt. Combine well.
Step 2
Cut the Britannia, The Laughing Cow Cheese cubes into halves. Keep aside.
Step 3
Take a tablespoon of the veggie mix, flatten it in your palm, place a cheese cube in the centre, and shape into a nugget. Repeat with all.
Step 4
In a small bowl, mix maida, cornflour, and water to make a smooth slurry.
Step 5
Dip each nugget in the slurry, then roll it in breadcrumbs. Let them chill in the fridge for 10 minutes.
Step 6
Heat oil in a deep pan. Fry the nuggets on medium heat until golden brown and crisp.
Step 7
Drain on a paper towel. Serve warm!
