Prepare scrambled eggs
Beat 2 eggs in a bowl and season with 1 tsp salt, ½ tsp black pepper, and ½ tsp paprika if using. Heat ½ tbsp butter in a pan on medium heat. Pour in the beaten eggs and cook, scrambling them until they are just set but still soft.Butter 4 slices of bread. Toast them in the same pan or in a toaster until golden brown. Spread ½ tbsp mayonnaise on one side of each slice of bread, if using. Place the scrambled eggs on 2 slices of bread.

Serve and enjoy!
Place 1 slice of Britannia The Laughing Cow Cheese Slices over the eggs on each sandwich. Optionally, sprinkle 1 tbsp chopped chives or spring onions. For a melted cheese sandwich, place the assembled sandwiches back on the pan and grill for 1-2 minutes until the cheese melts. Slice the sandwiches in half and serve warm. Enjoy your cheesy egg sandwich with a side salad or crisps!
