Step 1
Cook the Noodles
Cook noodles according to package instructions. Drain and rinse in cold water. Drizzle with sesame oil, toss well to coat, and set aside. Prepare a cornstarch slurry by mixing cornstarch and water in a small bowl and keep aside.
Step 2
Sauté Aromatics & Veggies
Heat oil in a pan or wok over medium heat. Sauté green chillies, ginger, and garlic for about 30 seconds. Add chopped onions and cook for another minute. Add mushrooms and French beans, stir-frying for 2-3 minutes until mushrooms begin to brown. Finally, mix in grated carrots, cabbage, and bell pepper.
Step 3
Toss with Sauces & Noodles
On high heat, stir-fry the veggies for 2-3 minutes until tender yet crisp. Add soy sauce, tomato ketchup, pepper, and salt to taste. If using tofu, add it now. Stir well, then lower the heat and stir in the cornstarch slurry. Cook for another minute. Add the cooked noodles, increase the heat, and toss well to coat with the veggies. Pour in rice vinegar and stir through.
Step 4
Finish with Cheese & Serve
