Step 1
Heat ghee in a thick-bottomed kadhai. Fry the cashews and raisins till golden, then set them aside.
Step 2
Add grated carrots and sauté for 8–10 minutes till soft and fragrant. Pour in the milk and cook till it’s absorbed.
Step 3
Now stir in the carrot halwa and condensed milk. Keep cooking and stirring occasionally, this carrot halwa easy recipe starts coming together like a warm, cosy hug.

Mix in cardamom powder and chopped dry fruits, saving some for garnish.
Step 5
In a separate pan, melt Cheese cubes into fresh cream. Add sugar and stir until smooth and creamy; that’s your rabdi.

Serve the halwa warm with a generous drizzle of cream cheese rabdi and a sprinkle of dry fruits.
