Step 1
Bake the potatoes
Preheat oven to 200°C. Place the potatoes directly on the oven rack and bake for 40-45 minutes until tender. Let the potatoes cool for 15 minutes, then slice them lengthwise and hollow out the insides into a mixing bowl. Slice the bottoms of each potato half slightly to make them level.
Step 2
Serve and enjoy!
Mash the potato flesh with butter, cream, salt, and pepper until smooth. Spread 1 tbsp of the potato mixture into each hollowed potato half. Sprinkle the grated Britannia The Laughing Cow Cheese Block in. Add a slice of bacon to each half and top with a raw egg. Lower the oven temperature to 190°C and bake for 18-24 minutes until egg whites are set but yolks remain runny. Top with the remaining cheese, season with salt and pepper, and garnish with chives.
