1 | Red bell pepper, sliced |
1 | Tomato, sliced |
1 | Zucchini, sliced |
1 | Onion, sliced |
2-3 tbsp | Olive oil |
As needed | Butter |
To taste | Salt and pepper |
Method
- Heat 1 tablespoon of olive oil in a frying pan over medium heat.
- Add the sliced red onion and sauté until translucent and slightly caramelised, about 3-4 minutes.
- Remove the onion from the pan and set aside.
- In the same pan, add another tablespoon of olive oil if needed, and sauté the sliced bell peppers and zucchini until they are tender-crisp, about 3-4 minutes. Season with salt and pepper to taste. Set aside.
- Take two slices of bread for each sandwich and butter one side of each slice.
- Place one slice of bread, buttered side down, on a clean surface.
- Layer with the Britannia The Laughing Cow Cheese Slices, followed by the sautéed vegetables (red onion, tomato, bell peppers, zucchini).
- Top with another slice of bread, buttered side up.
- Heat a clean frying pan or griddle over medium heat.
- Carefully place the assembled sandwiches onto the pan and cook until the bottom bread slice is golden brown and crispy, about 2-3 minutes.
- Carefully flip the sandwiches using a spatula and cook the other side until golden brown and the cheese is melted, about 2-3 minutes more.
- Remove the sandwiches from the pan and let them cool slightly before slicing and enjoy hot.
