4Britannia The Laughing Cow Cheese Slices
1Red bell pepper, sliced
1Tomato, sliced
1Zucchini, sliced
1Onion, sliced
2-3 tbspOlive oil

Method

  • Heat 1 tablespoon of olive oil in a frying pan over medium heat.
  • Add the sliced red onion and sauté until translucent and slightly caramelised, about 3-4 minutes.
  • Remove the onion from the pan and set aside.
  • In the same pan, add another tablespoon of olive oil if needed, and sauté the sliced bell peppers and zucchini until they are tender-crisp, about 3-4 minutes. Season with salt and pepper to taste. Set aside.
  • Take two slices of bread for each sandwich and butter one side of each slice.
  • Place one slice of bread, buttered side down, on a clean surface.
  • Layer with the Britannia The Laughing Cow Cheese Slices, followed by the sautéed vegetables (red onion, tomato, bell peppers, zucchini).
  • Top with another slice of bread, buttered side up.
  • Heat a clean frying pan or griddle over medium heat.
  • Carefully place the assembled sandwiches onto the pan and cook until the bottom bread slice is golden brown and crispy, about 2-3 minutes.
  • Carefully flip the sandwiches using a spatula and cook the other side until golden brown and the cheese is melted, about 2-3 minutes more.
  • Remove the sandwiches from the pan and let them cool slightly before slicing and enjoy hot.
