The most simple and satisfying meal when you’re short on time but want something hearty is a cheese sandwich. The combination of creamy cheese with lightly toasted bread is a timeless one for a good reason, but it does fall short in just one way – the ratio of bread to cheese. Sometimes it can feel like there’s more bread in the mix and the flavour of the cheese gets lost in the process, and that’s where the open sandwich comes to the rescue.

With the creamy taste and convenience of Britannia The Laughing Cow Cheese Slices, you can put together the perfect open cheese sandwich in minutes that has the melted goodness of cheese in every bite. Here’s an easy recipe that you can whip up at any time of the day.

Open Cheese Sandwich Recipe – Serves 2

Prep time: 15 mins, Cooking time: 10 mins

Gooey melted cheese with just the right amount of crunch from the toasted bread, a match made in heaven.

Ingredients

4 slicesBread
1 tbspButter
1 tbspFlour
10Britannia The Laughing Cow Cheese Slices
1 tspMustard
1/2 cupMilk
To tasteSalt and pepper

Method

  • Preheat your oven to 230 C. Lay the slices of bread on a baking tray lined with parchment paper. Toast them in the oven for a few minutes on each side until they are golden brown.
  • While the bread is toasting, melt the butter in a small saucepan over low heat. Add the flour and stir continuously for about 30 seconds until well combined.
  • Gradually pour in half of the milk while stirring vigorously to prevent lumps from forming. Continue stirring until the mixture is smooth.
  • Gradually add the remaining milk, stirring constantly until the sauce thickens and becomes a smooth, thick paste.
  • Add the Britannia The Laughing Cow Cheese Slices, mustard (if using), and black pepper to the sauce. Continue cooking for another minute or two, stirring constantly until the cheese is completely melted and the mixture is smooth.
  • Using a spoon, spread the cheese sauce onto the untoasted side of each bread slice, making sure to cover the entire surface.
  • Return the tray to the oven and bake for 5 minutes until the cheese is melted and golden brown.
  • Serve hot with your favourite sauce for dipping.
