Cheese Egg Sandwich Recipe – Serves 2

Ingredients

2 | Burger buns, halved |
2 | Eggs |
2 slices | Britannia The Laughing Cow Cheese Slices |
1 tbsp | Butter |
1 tbsp | Mayonnaise (optional) |
1 tsp | Salt |
1/2 tsp | Black pepper |
1/2 tsp | Paprika |
1 tbsp | Chives or spring onions, chopped |
Method
- Beat 2 eggs in a bowl and season with 1 tsp salt, ½ tsp black pepper, and ½ tsp paprika if using.
- Heat ½ tbsp butter in a pan on medium heat. Pour in the beaten eggs and cook, scrambling them until they are just set but still soft.
- Butter 4 slices of bread. Toast them in the same pan or in a toaster until golden brown.
- Spread ½ tbsp mayonnaise on one side of each slice of bread, if using. Place the scrambled eggs on 2 slices of bread.
