Funfetti Cheesecake
This soft, creamy funfetti cheesecake is perfect for parties, brunches, or just a midweek mood lift. The Laughing Cow Cheese makes it melt-in-your-mouth smooth and mildly tangy.
How to Make
- 1.
Preheat the Oven
Switch your oven on and set it to 160°C. It’s always best to do this first so it’s ready when you are, no waiting around later.
- 2.
Make the Biscuit Base
In a mixing bowl, stir together crushed digestive biscuits and melted butter. It should feel like damp sand and hold together when pressed.
- 3.
Press the Base into the Tin
Spoon the biscuit mix into a greased or lined 6-inch springform tin. Press it down firmly with the back of a spoon so it forms an even, tight base.
- 4.
Chill the Base
Place the tin in the fridge for 10–15 minutes. This helps the base set nicely and gives you time to work on the creamy topping.
- 5.
Mix the Filling Ingredients
In another bowl, add The Laughing Cow Cheese, hung curd, fresh cream, sugar, vanilla extract and cornflour. These form the smooth, creamy filling.
- 6.
Whisk It All Together
Use a whisk or even a spoon to mix everything until it’s silky and lump-free. No electric beater needed just mix until it looks smooth and well combined.
- 7.
Add the Rainbow Sprinkles
Now comes the fun part! Gently fold in the rainbow sprinkles. Don’t mix too much or the colours might start to bleed into the batter.
- 8.
Pour Over the Base
Take your chilled biscuit base out of the fridge and pour the cheesecake mixture on top. Give the tin a little tap to even out the top; no need to smooth it out too much.
- 9.
Bake the Cheesecake
Place the tin into your preheated oven and bake for 40 to 45 minutes. The edges should look firm, and the centre should still have a gentle jiggle; it’ll firm up as it cools.
- 10.
Let It Cool Naturally
Once baked, turn off the oven and let the cheesecake sit in the tin for about an hour. This gradual cooling helps avoid cracks on top.
- 11.
Chill in the Fridge
After cooling, pop the cheesecake in the fridge for at least 4 hours or overnight if you can wait. It firms up beautifully and tastes even better the next day.
- 12.
Sprinkle and Serve
Before serving, add a few extra rainbow sprinkles on top for that joyful pop of colour. Slice and enjoy a creamy, colourful treat that’ll make everyone smile.
