Cheesy Hariyali Aloo Paratha

How to Make

Prepare Spinach Puree
Blanch spinach leaves in boiling water for a minute, drain, and blend into a smooth puree with ½ cup water.

Make Dough
In a bowl, mix wheat flour, cumin powder, salt, and 2 tbsp oil. Add spinach puree and water gradually to form a soft dough. Knead well, cover with a damp cloth, and rest.

Prepare Stuffing
Mash boiled potatoes in a bowl. Add onions, bell peppers, cilantro, cheese triangles, spice powders, chilli-ginger paste, salt, and lemon juice. Mix gently and divide into 10 equal balls.

Roll Dough Balls
Knead the dough again with 1 tbsp oil. Divide into 10 portions, roll into small discs, and place one stuffing ball in the centre. Seal edges and roll into parathas.

Cook Parathas
Heat a tawa on medium flame. Cook each paratha until golden brown spots appear. Drizzle oil around edges, press gently, and cook both sides until crisp.

Serve hot with curd, pickle, or chutney. Best enjoyed fresh!
