Baked Egg Stuffed Potatoes

How to Make

Preheat the oven
Preheat oven to 200°C.

Bake the potatoes
Place the potatoes directly on the oven rack and bake for 40–45 minutes until tender.

Cool and hollow
Let the potatoes cool for 15 minutes. Slice them lengthwise and hollow out the insides into a mixing bowl.

Level the potato halves
Slice the bottoms of each potato half slightly to make them level.

Prepare the potato filling
Mash the potato flesh with butter, cream, salt, and pepper until smooth.

Fill the potatoes

Bake again
Lower the oven temperature to 190°C and bake for 18–24 minutes until egg whites are set but yolks remain runny.

Finish and garnish
